ULANDOGARE (URAD RICE – IYENGARS’ SPECIAL) ಉಳಂದೋಗರೆ (ಉದ್ದಿನ ಬೇಳೆ ಅನ್ನ)


Cooked rice – 1 bowl
Urad dal – 3 table spoon
Cashew – Handful
Hingu – 1/2 tea spoon
Curry leaves – 2 bunch
Grated copra (dry) – 2 table spoon
Ghee – 4 table spoon
Milk – 100 ml
Salt – for taste
METHOD:- Heat ghee in a pan, add urad dal, cashew fry for 2 minutes. Add hingu n curry leaves, fry for a minute. Add milk n cook till urad dal becomes soft on a low flame. when oil separates add rice, copra, salt, mix well. Serve hot with tamarind gojju n urad pappad. In tamil Uland means urad dal, hence d name. This rice is mild n rich in taste.


TAMARIND GOJJU Ingredients:-

Tamarind – lemon size
Red chilli powder – 1 tea spoon
Mustard – 1/2 tea spoon
Jeera – 1/2 tea spoon
Jaggery – little
Curry leaves – 1 bunch
Hingu – a pinch
Oil – 1 tbl spoon
Salt – to taste
METHOD:- Clean tamarind, extract juice. Heat oil add mustard, jeera, hingu,
curry leaves, tamarind juice, jaggery, salt. Boil for 2 or 3 minutes. This gojju will be
nice with Pongal also.
